Orange-coloured produce such as carrots, sweet potato, oranges and squash are high in beta-carotene, a precursor of vitamin A, or retinol, which can be turned into vitamin A in the body if needed. Vitamin C and beta-carotene strengthen the immune system and have important antioxidant properties.
2 tbsp. coconut oil
200g butternut squash
200g sweet potatoes
6 tbsp orange juice.
- 1. Peel and chopped the veg, set aside.
- 2. Pre-heat the oven to 180oc, pop the coconut oil on a baking tray, place the tray in the oven and allow the oil to melt.
- 3. Next, place the veg on the tray making sure the oil covers all the vegetables. Cook for 30 – 40 minutes or until the veg is tender.
- 4. When the veg is cooked carefully place it in a food processor with the orange juice and pulse until smooth or to your desired consistency.
