Mushroom Mash

This mushroom mash is packed full of essentials nutrients, it’s the ideal meal to help boost your baby’s immune system.  Mushrooms are rich in beta-glucans, which helps protect the body against disease. They are also rich in B vitamins, vitamin C, proteins, iron, potassium and other minerals. Making mushrooms a baby super food!

Ingredients:

1/2 small red onion (finely sliced)

1 small garlic clove (crushed)

1 tbsp. coconut oil

1 tbsp. chopped parsley

2 tbsp. boiled water

300g sweet potato

Method:

  1. 1. Cut the sweet potato into cubes, place the cubes into a steamer, steam for 20 minutes or until the potato is tender.
  2. 2. Next,  warm the coconut oil in a frying pan.  Fry the onion on a gentle heat for a few moments, then add the garlic, mushrooms and parsley. Cook for 10 minutes, stirring constantly.
  3. 3. When the vegetables are cooked place them all into a food processor, add the water and pulse until smooth or your desired consistency.

 

Mumma’s Tip: Please make sure your baby is over 8 months old before trying this delicious puree!
