Coconut Avocado Truffles

Perfect for school lunches, morning or afternoon snacks, these avocado bliss balls will go down a treat.

Cooling time: 1 hour. 30 minutes


1 medium avocado (ripe)
100g dark chocolate
397g condensed milk
1 tsp vanilla essence
220g sweetened shredded coconut.
100g chopped mixed nuts.


Cut the avocado in half, remove the seed, and spoon out the flesh into a mixing bowl. Using a fork or masher, mash the avocado really well, until smooth and no chunks remain.

Mix in the condensed milk, vanilla extract, nuts and coconut. Using your fingers, press the mixture into balls, place on a baking tray and pop in the fridge for 1 hour.

After the balls have set, melt the chocolate over a double boiler, until fully melted. Dip the balls into the chocolate to coat evenly, place onto a new baking tray with lined paper and sprinkle with coconut, pop back in the fridge for 30 minutes – enjoy!
